Ingredients

  • 6 chicken thighs, bone-in
  • 1 lb baby potatoes, halved
  • 2 cups broccoli florets
  • 3 tbsp olive oil
  • 1 tsp garlic powder
  • Salt and pepper to taste

Instructions

    Heat the oven to 425°F.

    Toss the potatoes with half the oil, salt and garlic powder on a sheet pan.

  3. 3

    Nestle in the chicken thighs, skin side up, and roast 20 minutes.

    Add the broccoli with the remaining oil and roast 15 more minutes.

  5. 5

    Rest 5 minutes and serve straight off the pan.

Notes

Any vegetable still alive in the crisper drawer works here. Swap in sausage for the chicken if that is what you have.
